Avocado Chickpea Cucumber and Tomato Salad is an addicting bowl of wonderful versatile ingredients that is delicious any time of the year.


If you're a fan of avocado, chickpea, and feta cheese, this salad is calling your name and even though fresh is best you can improvise with winter vegetable additions during the cooler months.


This salad has so many possibilities to add or change just the way you want to eat it with a list of many suggestions below.

Ingredients You Will Need

  • cucumber sliced in chunks seeds removed with a spoon
  • grape tomatoes sliced in half or any tomatoes cut up 
  • garbanzo beans (chickpeas) rinsed and drained
  • avocado peeled and sliced in wedges
  • sliced kalamata olives
  • freshly chopped parsley
  • chopped mint leaves (optional)
  • oregano, garlic powder salt, and pepper
  • pinch of cayenne pepper
  • lime juice
  • lemon juice
  • extra virgin olive oil
  • mozzarella or feta cheese



these are chopped fresh radishes, cucumbers and carrots

  1. diced hot, sweet, jalapeno peppers

This is a delicious salad made with avocado, chickpeas, tomatoes olives and cheese. It's light, healthy and the perfect salad any time of the year!

Ingredients

  • 1 medium-sized cucumber sliced in chunks seeds removed with a spoon
  • 1 cup grape tomatoes sliced in half
  • 1 can garbanzo beans (chickpeas) rinsed and drained
  • 1 avocado peeled and sliced in wedges
  • 1/2 cup sliced kalamata olives
  • 1/2 cup freshly chopped parsley
  • 1/2 teaspoon each oregano, garlic powder salt and pepper
  • pinch of cayenne pepper
  • 3 tablespoon lime juice
  • 1 tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 cup chopped mozzarella or 1/2 cup feta cheese
  • Optional Suggestions to Change it up!

Instructions

  1. In a medium-size bowl add the chickpeas, cucumber, avocado, tomatoes, and olives. 
  2. Mix together adding parsley. In another small bowl mix the dressing, add the lemon juice, fresh lime juice, olive oil, spices, and herbs adding a pinch of cayenne pepper. 
  3. Pour over the top of the vegetable mixture. Top with cheese of choice. Serve cold.
  4. This tastes better when refrigerated for at least three hours to blend flavors... That's if you can wait!
