| No I am not an expert on Rice and Beans in South, but an expert on spicing it up! This is something I threw together that was delicious, easy, perfect for a barbecue and a great side dish!
2 cups red beans or pinto beans canned or dried cooked
1 tablespoon olive oil 1 teaspoon minced garlic 2 cups cooked rice to package instructions ( I used success rice which is instant) 1 teaspoon chili powder 1/4 cup olive oil 1/4 teaspoon cumin 1/4 teaspoon garlic powder dash of cayenne pepper 1/4 teaspoon oregano salt and pepper to taste Saute cooked beans in 1 tablespoon of olive oil and 1 teaspoon of minced garlic. Add cooked rice in a bowl with the beans toss with all seasonings add olive oil, blend together. Serve warm with your favorite barbecued pork. +claudia lamascolo Author |
