Here is a  favorite delicious side dish called twice-baked potatoes and we kept ours super simple so that you can take it where you want it. Anything and everything goes well mixed into a twice baked potato.


These are all basic simple ways to make these delicious spuds from plain to spectacular toppings and add ins.


Baked, microwaved, air fried, you can choose the easiest method that works in your home to make this fabulous side dish.


We love them for parties and picnics because they are so portable and you can actually set up a topping bar with all the fixins.

  • Potatoes (russet or baking potatoes)
  • Shredded cheeses (pick up your favorite kind)
  • Grated cheese (I use Parmesan and Romano blended)

  • Milk or cream (even half and half will work)

  • Minced onions, chives, garlic

Cooking Potato Methods


  1. Air Fry: I always microwave the potatoes, fill them, top with cheese and air fry them until cheese melts at 400 degrees around 8 minutes for 4 potatoes.
  2. Microwave: microwave the potatoes on high until soft 8 to 0 minutes, proceed with filling recipes and suggestions.
  3. Oven-Baked: Bake potatoes on 400 degrees for 1 hour until soft. Cool slice and proceed with filling recipes.
  4. Convection Oven: Place the potatoes in the convection oven at 400 degrees for 25 minutes or until soft, proceed with filling recipes.
  5. Slow Cooker (slow cook the potatoes with 1/2 cup water overnight. Cool, slice, and proceed with recipes for fillings)

Twice Baked Potato Recipes

Here are three recipes for twice baked potatoes. The potatoes are the perfect side dish. They are filled with cheeses, some bacon and some are plain. They are cooked in the microwave then baked or air fried.
prep time: 15 Mcook time: 8 Mtotal time: 23 M

ingredients:

  • Parmesan, Provolone and Bacon Twice Baked Potatoes
  • 4 potatoes microwaved, cut in half and scooped into a bowl (saving the jackets later to fill).
  • 1 teaspoon granulated garlic powder
  • 1/4 cup milk or more if you like it a thinner consistency
  • 4 tablespoon whipped cream cheese
  • 3 tablespoons crumbled cooked bacon
  • salt, pepper to taste
  • 3 tablespoons butter
  • 1/4 cup grated Parmesan cheese added to the potato mixture
  • For the top of each potato:
  • 4 to 6 slices of provolone cheese slices cut in half
  • Optional Garnish: dried parsley flakes, paprika, more bacon for topping
  • Sour Cream and Bacon Twice Baked Potatoes
  • 4 potatoes microwaved, cut in half and scooped into a bowl (saving the jackets later to fill)
  • 1/2 cup crumbled cooked bacon and more for the tops ( use freshly fried bacon for best results)
  • 1/2 cup sour cream
  • 1/2 shredded sharp cheddar cheese and more for the tops
  • 1/4 cup milk or cream or more if you like it a thinner consistency
  • salt, pepper to taste

  • 4 tablespoons butter melted
  • Ricotta Mozzarella Twice Baked Potato Recipe
  • 4 potatoes microwaved, cut in half and scooped into a bowl (saving the jackets later to fill)
  • 3 tablespoons whipped cream cheese
  • 1/2 cup Ricotta cheese
  • 1/2 cup shredded mozzarella divided ( save some for the tops)
  • 2 tablespoons of milk or more if you like it a thinner consistency
  • salt and pepper to taste
  • grated cheese Parmesan and Romano blends
  • 1/2 teaspoon granulated garlic or more for to taste
  • Optional Garnish: paprika and dried parsley for garnish on top
  • Roasted Garlic Twice Baked Potatoes
  • 6 potatoes microwaved for nine minutes. Cool sliced in half lengthwise. Carefully scoop out the potatoes into a large bowl.
  • 4 tablespoons of butter
  • 3 tablespoon of whipped cream cheese
  • 1 teaspoon roasted garlic minced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon parsley
  • 1/4 cup milk or cream
  • Optional Garnish: paprika and dried parsley for garnish on top
  • Broccoli and Cheddar Stuffed Twice Baked Potatoes
  • 4 potatoes microwaved for nine minutes. Cool sliced in half lengthwise. Carefully scoop out the potatoes into a large bowl add below and fill the jackets. Sprinkle tops with more shredded cheddar and bake at 400 for 15 minutes until cheese is browned and bubbling.
  • 4 tablespoons of butter
  • 1 cup broccoli florets steamed and cut up in small pieces
  • 1/2 cup sour cream
  • 1 cup extra sharp cheddar cheese shredded and more for the tops
  • 1/2 teaspoon garlic powder
  • salt, pepper to taste (cayenne pepper for heat)
  • 1/4 teaspoon parsley
  • 1/4 cup milk or cream
  • Optional additions: crumbled bacon or 1 cup loose fried hamburger meat drained.

How to cook Twice Baked Potato Recipes

  1. Preheat the oven to 400 degrees or broil on HI until cheese melts 
  2. Note: these can also be air fried on aluminum foil until heated for 5 to 8 minutes. 
  3. Directions for all recipes: 
  4. Microwave the potatoes, you can do them in a convection oven, regular baked in conventional ovens, make them in a slow cooker or boil them until they are cooked leaving them whole. Cool, slice lengthwise in half. 
  5. Scoop the potato of each one carefully with a teaspoon and place it in a medium-sized bowl. 
  6. Whip the potatoes with a hand beater or you can mash them with a fork and leave them chunky. 
  7. Add any of the ingredients for the recipe you choose reserving some of the shredded cheese for the tops. 
  8. Place in a casserole dish or baking sheet for the broiling, baking in the oven,  or on foil for air fryers. 
  9. Sprinkle each potato with any kinds of cheese slices or shredded cheese on top, dried parsley, more grated cheese if desired, (I use slices for the provolone twice-baked potatoes). 
  10. During the holiday, I sprinkle them with paprika and parsley for a holiday-themed look. 
  11. Place the potatoes in the preheated oven at 400 degrees and bake until the cheese melts or you can broil until the top of the cheese browns. 
  12. All recipes can be adapted for toppings and additions as suggested. 
  13. These potatoes are great reheated in an air fryer if you have any leftovers.

  2. Give me those roasted garlic potatoes any ole time! All these sound so good that I like the idea of a potato bar where everyone adds their own flavors. And I'm definitely trying that air fryer method as I can't get enough of using it.
