Antipasto Submarine Salad Sandwich is an antipasto salad between layers for toasted Italian seasoned bread.


This is a whole meal in itself and will feed between 5 and 6 people.

My kids devoured this antipasto sandwich so fast it wasn't funny, I had to make two!


We love this Italian salad, to begin with, but having it as a meal in a huge submarine sandwich really was the best idea ever!


Oh, they love Italian potato salad or my tortellini salad but when it comes to lettuce no so much.


Actually, my son Chad came up with this idea, he is the biggest lover of the Italian Classic Salad, and Antipasto Pizza Roll, I couldn't help but share this idea with my readers!


This sandwich is packed with imported Italian meats, cheeses, layers of lettuce tomatoes and doused with a good grade oil and vinegar.

A Whole Meal in a Bread Salad Loaf!



Not everyone here in our home is big on salad, but this was gone so fast and the way to get them to eat those vegetables.


Most all the men in my family love the meats and cheese and of course great Italian bread but a regular salad, is a no go other than one son and I!


I am happy to serve salad this way now and it's funny how I have had to inspire them in a different way to eat their vegetables!


Everyone loved it and now I make this often for movie night and especially those big Sunday Game Days!

Tips


  • Toast the bread first
  • Always season each layer
  • Use granulated garlic powder for a garlic bread flavor
  • Always use olive oil not butter for toasting
  • Keep the leftovers in the refrigerator for no more than two days
  • Store in a plastic container or plastic wrap

This is a full loaf of bread sliced in 3 layers made into a huge Antipasto Submarine Salad Sandwich

ingredients:

  • Here's what we like in it mostly all imported meats and cheeses:
  • Sliced Mortadella ( Italian style bologna)
  • Soppressata
  • Genoa Salami or Hard Salami
  • Roast beef sliced thin
  • Capicola
  • Sliced Mozzarella
  • Sliced Provolone sharp or mild
  • Pepperoni
  • Peperoncini left whole or sliced
  • Sliced Plum Tomatoes
  • Romaine Lettuce
  • Sliced Black Olives cured, green or calamata
  • Hot Peppers or Roasted Peppers
  • 1 Whole loaf unsliced Italian Bread
  • Red Wine Vinegar, or Balsamic
  • Extra Virgin  olive oil
  • salt, pepper, oregano, basil, minced garlic, 
  • Pecorino Romano grating cheese
  • Optional: cayenne pepper
  • Other sandwich options: chopped artichoke hearts, prosciutto, boiled eggs slices, sliced cucumbers, chickpeas, tuna, capers, green or black olives, cooked eggplant slices or zucchini, sliced mushrooms, sliced onions, anchovies

instructions:

How to cook Antipasto Submarine Salad Sandwich

  1. Slice the bread in 3 layers, brush each layer with olive oil, add herbs, spices, and minced garlic then end with a sprinkle with grated cheese, to each sliced layer (you can also use shredded mozzarella if you prefer).
  2. Broil each layer a few minutes until browned, watching carefully not to burn.
  3. As you have stacked each sliced layer with whatever you like, drizzle with vinegar, olive oil, sprinkle with basil, oregano, grated Pecorino Romano cheeses.
  4. First layer: add whatever you would put into your salad here IE lettuce, tomatoes, peppers, olives, provolone or any cheese you like, etc.
  5. Second layer meats of any kind, more cheeses or you can do a layer with olive oil-packed tuna on it. 
  6. Brush the top of the brush with olive oil, sprinkled with granulated garlic and more Pecorino Romano Cheese.
  7. Slice and serve.

I've never met an antipasto I didn't like and neither has my family, but I'd happily eat a sandwich at every meal as well and combining two of my favorite things is bliss. Now if a chocolate brownie just "fit in."

  11. Yummy! I am really craving one of these now! I used to make them weekly and then cut off slices for my kid's lunch. Putting the salad between the meat and cheese kept it from getting soggy which was perfect for school lunches. I think I'll go make one of these beauties for me!
