This is an easy recipe made with any stout beer and lots of cheese is great for any potato lover and everyone that tastes this fabulous scalloped rich creamy sauce goes back for seconds!

Who can resist bacon, potatoes, and sharp melted Dubliner cheese in a cream sauce baked to perfection?

This recipe is like hitting the Best Potato Recipe jackpot.

I love this side dish on St. Patrick's Day but these are perfect all year long with any meal you're serving from hot dogs on the grill to the corned beef brisket!

Easy Steps to Make Guinness Scalloped Cheesy Potatoes

  1. Make a paste with the flour and butter in a saucepan. Heat and whisk until smooth. Add all seasonings. Stir to combine evenly. 
  2. Add the beer, chicken broth, and heavy cream and stir till smooth. Add the cheese and Worcestershire sauce. Stir until all is melted. 
  3. In a casserole dish layered with sauce and cheese Add more cheese grated to the top. 
  4. Bake in 375 degrees preheated oven until the top is browned and the cheese starts to get crispy
  5. Sprinkle with crumbled bacon when cooked

  • Use any kind of extra sharp cheddar
  • Always serve this hot

I make these scalloped potatoes with bacon and cheddar every year for St. Patrick's Day as a dip instead of the casserole.



Just by adding more milk and chopping the potatoes up in chunks, it's really yummy with beer bread!



since we usually have the slow cooker corned beef and cabbage with Colcannon Potatoes.

A cheesy baked casserole made with Dubliner cheese and Guinness beer that's the perfect side dish with any smoked or grilled meats.

ingredients:

  • 1/2 cup Guinness Beer
  • 1/4 butter and 1/4 flour
  • 1 teaspoon minced garlic
  • 1/2 teaspoon garlic powder
  • dash of cayenne pepper
  • 1 teaspoon of sea salt
  • 1/2 teaspoon white pepper or use regular
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/2 cup chicken broth
  • 1/2 pound Dubliner of extra sharp ( cheddar cheese)
  • 1/2 cup heavy cream, half and half or whole milk
  • 1 cup evaporated milk
  • 1/2 teaspoon Worcestershire sauce
  • 1 pound of bacon cooked until extra crispy for the top
  • 3 pounds Yukon Gold potatoes thinly sliced (if you're making the dip, then just boil and mash leaving in small chunks first, then adding some milk and butter to make them loosen flowing)
  • 1 cup shredded Dubliner Cheese for the top
  • Optional chopped red peppers

How to cook Guinness Scallop Cheddar Bacon Potatoes

  1. Make a paste with the flour and butter in a saucepan.
  2. Heat and whisk until smooth. Add all seasonings. Stir to combine evenly.
  3. Add the beer, chicken broth, and heavy cream and stir till smooth. Add the cheese and Worcestershire sauce.
  4. Stir until all is melted.
  5. In a large buttered baking deep casserole dish, add the potatoes on the bottom, cheese sauce, and more potatoes, and keep layering with cheese sauce until it's all in the casserole.
  6. Add more cheese grated to the top.
  7. Bake in 375 degrees preheated oven for at least 70 minutes or more until the top is browned and the cheese is crispy plus the potatoes are nice and soft when pierced with a fork.
  8. Sprinkle with crumbled bacon when cooked ( we like the bacon crispy not soft so I do not add it to the casserole.
