Chicken and Dumplings Italian Style

During the last view years, I have craved comfort foods like chicken and dumplings.


Of course, since I have to cook everything with a little Italian style flair, these were another one of those delicious experiments


Mom never made anything like this dish growing up, everything we had was Italian period, and that's ok!


In the last few years, my kids are grown now, and with future changes and lifestyles, I am learning to cook all kinds of foods.


We got some great news that I am going to be a grandmother, and the craving just happened to be these chicken and dumplings.


Grandma will not disappoint mama and baby, so here is my first stab at making these.


This is a hearty dish everyone loves here in the South.


Even with my little Italian spin on this dish, it was a classic hit.

I was shocked at how delicious this gravy was and creamy over those soft dumplings, a definitely drool-worthy dish that smelled and tasted fabulous!

Easy to make



I was very surprised to see on my first try to make this dish, how easy it was.


The dumplings puffed up nicely and the stew part was so flavorful!

The Dumpling Broth


The broth is so flavorful, between the vegetables and herbs, I almost want to use this as soup.


It really is one of the most comforting foods I have ever made, of course, I had to do an Italian twist on this Southern favorite!

Change it Up!



I add what my family likes for vegetables.


Some suggestions I have are mushrooms, and green peppers. onions, corn, peas, green beans, potatoes, carrots, and celery all diced in small pieces so they cook faster.


I am sure you can add mixed vegetables or anything else you prefer.


We like a little heat so I like to add cayenne pepper to mine.


I never add onions because I am allergic, however, I add a lot of extra garlic!


I also like to add some grated cheese, herbs, and garlic to my dumpling dough!

Stew



If you love hearty stew meals, this is a simple all in one pan which requires no bread.


How fun is it to have the whole meal all in one bowl!


Vegetables, sauce, dumpling, and chicken is the perfect solution to getting all your food groups together easily!


Biscuits and gravy are a staple in the South. This is bursting with flavors and the dumplings are soft, fluffy and tender.


The gravy and vegetables are almost like eating a pot pie in a bowl!




Suggestion and Time Savers

Substitute any of these below for other ingredients listed for quick meals


  • Rotisserie chicken cut off the bone
  • Frozen chicken chunks
  • Premade biscuits mixes
  • Use cream soups for substituting sauces
  • Mixed frozen vegetables

Even if you use the cream soup and don't make the sauce from scratch, you must add my secret ingredient.

Ingredients You Will Need To Make Chicken and Dumplings Italian Style

  • Chicken
  • flour
  • baking powder
  • salt
  • eggs
  • half and half or whole milk
  • garlic powder, parsley
  • black pepper
  • pinch of cayenne powder
  • Dumpling Sauce:
  • chicken broth
  • diced carrots
  • celery
  • potatoes diced or more to family size
  • mushroom slices, peas, corn or any other kind of vegetable you like
  • garlic cloves
  • sherry
  • heavy cream
  • fresh basil leaves chopped
  • butter
  • olive oil

Taking Shortcuts




I do love making everything from scratch, but I give suggestions for the hurried cooks out there.


Sometimes you just need to take shortcuts when you have a busy household.


If you love Chicken and Dumplings with no time, just substitute premade ingredients.


I also love pot pies and when I need a quick pot pie, I use leftover chicken mixed vegetables and store-bought pie crust, easy peasy!

Made From Scratch



Making this chicken and dumplings Italian style from scratch to me is the best way if you have time!


The Italian flair these have made them tastier and addicting for sure!


It may not taste exactly like the classic old fashioned recipe of Chicken and dumplings but it's the tastiest version you'll ever make.


The smell alone will make you impatient to wait to eat this!

Season the Chicken



When it comes to chicken, don't miss that step of seasoning and making it flavorful.


Even if you use the store-bought styles, season it first if it's bland.

Chicken and Dumplings Italian Style

This the most delicious comfort food ever! I created a little flair to this classic chicken and dumplings with a kick of Italian spices in the chicken. One taste and you'll be hooked on this awesome gravy with these pillow-soft dumplings.

ingredients:

  • First Flavor the Chicken or use store-bought rotisserie chicken:
  • 5 boneless chicken breasts
  • 2 tablespoons minced garlic
  • garlic powder
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons fresh rosemary
  • 1/2 teaspoon oregano dried
  • 4 leaves fresh basil chopped
  • salt pepper to taste
  • 1/4 cup olive oil

instructions:

How to cook Chicken and Dumplings Italian Style

  1. Prepare the Chicken:
  2. Place the chicken breasts on a cookie sheet greased and sprinkle with garlic powder evenly and all the above mixed together, drizzling the olive oil over each piece. Bake for around 45 minutes on 350 or until no longer pink in the middle.
  3. Cool. Slice into cubed size pieces set aside.
  4. Make the Dumplings or use a premade biscuit mix:
  5. 2 cups flour
  6. 1 tablespoon baking powder
  7. 1 teaspoon salt
  8. 2 eggs
  9. 3/4 cup half and half or whole milk
  10. 1 teaspoon each garlic powder, parsley
  11. 1/2 teaspoon black pepper
  12. Optional: 1/4 grated Romano cheese
  13. pinch of cayenne powder
  14. Mix the dry ingredients and herbs in one bowl and the wet ingredients in another. Pour the wet ingredients into the dry just until moistened and all comes together. Cover dough with a wet towel and set aside.
  15. Dumpling Sauce or use a cream soup any kind adding sherry:
  16. In a large saucepan add:
  17. 6 cups chicken broth
  18. 1 cup diced carrots
  19. 1/4 cup chopped celery
  20. 2 medium-sized potatoes diced or more to family size
  21. (optional) 8 oz. mushroom slices, peas, corn or any other kind of vegetable you like
  22. 3 minced garlic cloves
  23. 2 tablespoons sherry (secret ingredient)
  24. 1/4 cup heavy cream
  25. 6 tablespoons flour
  26. 1 or 2 fresh basil leaves chopped
  27. 3 tablespoons butter
  28. 1 tablespoon olive oil
  29. In saucepan melt butter, add the oil. Sauté the garlic and vegetables for around 2 minutes. Add the flour and stir. Pour the chicken broth in this vegetable mixture. Add the sherry. Simmer 15 to 20 minutes until the vegetables are soft then add the heavy cream. Fold in chicken. Let that come to a slow simmer.
  30. Add the dumpling mixture around 2 tablespoons and cook until they are light and puffy around 15 minutes. For thicker sauce continue cooking until liquid boils away.
  31. Note: all vegetables are diced very small or sliced fine and thin.

Growing up we ate a lot of chicken -- that was an affordable meat and mamma used the bones for brodo and our gnocchi were a little different than yours. They sound more like the ones my MIL made -- she was German. And let me tell you, they were excellent too. I'll have to try your recipe.
