Here is the perfect medley using tomatoes, spinach, and peppers as a side dish but also used in fillings, as a topping, and makes a delicious sandwich.

These sauteed vegetables are favorite combinations but we have several additions and substitutions below to make your next medley perfect and just what your family prefers.

Today using our medley the flavors are delicious for any brunch, lunch, or dinner, and when this to is added to scrambled eggs, even breakfast.

The best part about this easy recipe, you can pan-fry, air fry, or oven-roasted the vegetables with our instructions below.

Versatile Vegetable Medleys



Using fresh vegetables can create a new medley every time you make this dish.


We use whatever we have on hand, but this trio is great with just about every meal we make plus leftovers go great and have so many uses.


With just a few ingredients you'll have a great side dish and with additions a whole meal!

Tips and Cooking Methods

  • Oven Roasted: place all the vegetables coated with cooking spray oil on a cookie sheet and bake at 400 degrees until softened to your preference around 35 minutes
  • Air frying(see photo below): brush the oil on your wire basket, and air fry vegetables at 400 for 12 to 14  minutes or until softened not browned unless you like crispy vegetables. 
  • Filling: use this as a sandwich filling, mixed into scrambled eggs, or as a filling in a stromboli 
  • Topping: use on top of pizza, topping salads, cooked chicken breast, poached or baked fish
  • Side dish: use as a side dish with any meat

  • spinach
  • Pecorino Romano cheese
  • fresh garlic 
  • tomatoes
  • peppers
  • salt, and pepper to taste
  • Optional: a pinch of cayenne pepper

    Other Additions and Suggestions

    • asparagus
    • artichoke hearts
    • deli meats
    • mushrooms
    • potatoes
    • add cooked bacon crumbled on top
    • zucchini slices or yellow squash slices
    • shredded or halved brussels sprouts
    • broccoli rabe, broccolini, cauliflower
    • juilenned carrots
    • peas, green beans, sprouts
    • chickpeas, white beans, red or black beans

    Great Side Dish


    The first time I made this I topped our baked fish with this and it was a delicious summer meal.

    There are so many creative ideas you can come up with to use these vegetables and anyway you serve them, these will be delicious.

    The flavors in the vegetables were so delicious I used the leftover in a hoagie-style sandwich with melted cheese.

    Spinach, Peppers and Plum Tomatoes

    This is a medley of sauteed vegetables used for fillings, toppings, and as a side dish

    Ingredients

    • 3 cloves garlic
    • 1 large bag of fresh spinach leaves
    • 1 bag of sweet baby peppers cleaned and seeded sliced or leave whole depending on your usage
    • 4 plum tomatoes quartered
    • salt, and pepper to taste
    • cayenne pepper to taste
    • 3 tablespoons of olive oil
    • Pecorino Romano grated cheese
    • slices of provolone or mozzarella
    • a loaf of crusty fresh Italian bread
    • Optional: toasted bread crumbs see note on the bottom

    Instructions

    1. In a large frying pan saute the garlic for 1 minute in the olive oil using low heat.
    2. Rinse the spinach and add it to a large frying pan.
    3. Note: do not use high heat with wet spinach to avoid splattering oil.
    4. Let it cook on low heat until the spinach wilts.
    5. Add the peppers and tomatoes ( any other additions/substitutions) and turn the heat to medium and cook until they are softened.
    6. Season to taste with salt, and pepper.
    7. This will now be ready to be used in a sandwich, topping, or as a filling for stromboli, pizza, etc see all suggestions under notes.
    8. You can also use any leftovers to make an omelet.
    9. Serve with grated cheese, toasted bread crumbs on top, and/or mozzarella slices, provolone slices cheese, or both!
    10. Also delicious served as a side dish with steak, chicken, or fish!
    11. Serve with crusty Italian bread and Vino! Enjoy.
    12. To toast bread crumbs heat 2 tablespoons of olive oil in a pan on low heat. Add 1/4 cup Italian flavored bread crumbs and stir fry until heated and crispy around 8 minutes.
    13. Sprinkle on top of vegetable medley.
