My brother John inspired me to make eggs with pepperoni, sauce and mozzarella. He said that mom made it that way. She always used leftover sauce, then both brothers would bring leftovers to school in a sandwich.

Dad always made the omelets with fried ham and eggs,then sometimes added peppers and potatoes. So I decided to try it with tomatoes, pepperoni, sauce and mozzarella baked! I think Mom would have loved this one even though she fried hers!

Italian Eggs Baked



This is a childhood favorite, mom made often.


Sometimes an early dinner on Sunday night she would make this fried frittata with eggs and pepperoni with cheese and leftover sauce.


As the years went by, I started using the same ingredients except I baked it, and it's so much easier.


Half the fat calories and still delicious.

Mom Made Everything A Banquet Meal



Back in the 1960's, money was tight, most family were one income.


Even though as time went on mom started out with her own business in catering foods, then after I was born she went to work full time in a grocery store managing a deli.


She was always a go getter.


Mom knew how to stretch a dollar and make every meal a banquet using everyday pantry items.

Mom Called this Depression Food



This was a delicious pan fried meal that came together fast and as you know if you work that's a must have recipe!


All us kids loved this even though it was considered depression food.


She made sure everything always tasted great with a few ingredients and was an inexpensive meal.


If there was leftovers, sandwiches were made for school lunch the next day.


This baked version is delicious and baked eggs with sauce and pepperoni is just a delicious way to prepare a quick meal for the family.

However if you love bacon use it, or any leftover cooked meats you prefer.


You can adapt this recipe and add more vegetables and no meat, or add more than one meat.


Even seafood added with some spinach is awesome.

prep time: 10 mins cook time: 35 mins total time: 45 mins
This is delicious breakfast, brunch and sometimes even dinner recipe mom made fried and I adapted to a baked version for Baked Eggs, with Sauce, Pepperoni and Mozzarella Recipe.

ingredients:

4 eggs beaten

sliced pepperoni chopped

1/4 cup pizza sauce

shredded whole milk mozzarella

chopped plum tomatoes or use whatever you have

2 cloves finely minced garlic

1 tablespoon chopped fresh parsley

grating cheese

instructions:

Beat the eggs, add everything but the cheese and sauce. Pour the egg mixture in a butter greased deep pie plate. Carefully put the sauce on top of the egg mixture then sprinkle mozzarella on top, then the grating cheese evenly. Bake at 400 degree hot oven until the eggs are set and browned, around 35 minutes or until the cheese is melted and a little brown.

  5. I just watched Lidia's Italy on PBS make a trio of fritattas and this looks like one of them. We eat eggs several times a week. A great quick and hearty dinner. Love their flexibility!
