Mom's Fresh Homemade Ricotta Cheese Recipe


So many verisons, this is how Mom made it..  make it once you'll never buy it again!


2 quarts whole milk
1 cup heavy cream
1/2 teaspoon salt
3 tablespoons lemon juice
1 fine mesh cheesecloth

 
Place a layer over a sieve with fine holes with the heavy-duty (fine-mesh) cheesecloth and then place it over a large bowl.
Slowly bring milk, cream, and salt to a rolling boil in a 6-quart heavy pot over moderate heat, stirring occasionally to prevent scorching. Add lemon juice, then reduce heat to low and simmer, stirring constantly, until the mixture curdles, about 2 minutes.
Pour the mixture into the lined sieve and let it drain 1 hour. After discarding the liquid, chill the ricotta, covered; it will keep in the refrigerator 2 days.

This is one of those times I wished we lived closer. For one reason making cheese has been one of my dreams, but I have never been brave enough to try it. It sounds o simple.

My daughter actually has the cute little plastic baskets to drain the cheese, from Italy that her m-in-law and it really works.
Your ricotta cheese looks so perfect and creamy...love your mom's recipe!

Dear Claudia, You would not believe this!! I made homemade ricotta last night!! We are soul sisters! With the price of ricotta I will be making it myself.

WOAH! I've been wanting to try making this for a long time now but for some reason have been nervous to. Ricotta is one of my favorite cheeses and use it almost every week. You may have given me that little push to finally try it on my own!
