If you love healthier appetizers and avocado this will be your new favorite snack food!


Sliced cucumbers topped with a lime, garlic avocado mixture then topped with fresh sliced grape tomatoes are all a match made in heaven.


These delicious little avocado appetizers are not only healthy but super delicious and perfect all summer long in the heat for a nice light before-dinner finger food.


Of course, the additions are endless that you can add to your avocado and we will surely give you some suggestions below!

The best part about these little avocado bites, is they are not only delicious but low in calories, easy to make and so darn healthy rich in vitamins.


You can serve them on a bed of fancy greens, romaine, arugula or leave them plain and watch them fly off the plate, they won't last long especially for all my vegetarian friends out there.

Get Creative



You can actually cut the cucumber with a cookie cutter and shape them for a pretty party-themed event.


If you have meat eaters only try chopped some deli meats like turkey, salami or black forest ham and mix it with a little low-fat dressing then top your cucumber with avocado and tomato garnish.
Leftovers meat is great to use also like cooked finely chopped rotisserie chicken.


Just adding your favorite spreads like cream cheese or hummus will start endless varieties of finger foods everyone will love.

Ingredients You Will Need

  • cucumbers
  • grape tomatoes
  • fancy greens, romaine lettuce, or spinach leaves
  • avocado diced
  • lime juice
  • salt, pepper, granulated garlic powder
  • Optional: romaine lettuce, mixed greens, arugula

  1. sharp knife
  2. cutting board
  3. spoon
  4. bowl
  5. toothpicks for serving

  5. Ham salad
  6. Taco filling cream cheese with taco seasoning

  8. Vegetarian (I am sure you can be great creative, I also love avocado, olives chopped, tomato, and sunflower seeds
  9. Diced apples, walnuts, arugula or other greens, raisins use peppercorn ranch
  10. BLT filling mayo crumbled cooked bacon, shredded lettuce, tomato
  11. Corned beef from the deli, thousand island dressing, coleslaw salad chopped, swiss cheese
  12. Spinach  and artichoke dip makes a great topping

If you're looking for low-calorie appetizers this is it and you can add more or fewer vegetables chopped to the avocado mixture.


You can even substitute avocado for hummus and top it with olives, and whole chickpeas!


I happen to love all the veggies in mine, however, we do have some picky eaters that just love their meat, and BLT style topped cucumbers are their favorite style snack!

Avocado Cucumber Tomato Appetizers

A refreshing little appetizer perfect for summer light snacks or a holiday Christmas-themed appetizer, these little avocado bites with cucumber and tomato are a perfect blend of flavors.

Ingredients

  • 1 avocado peeled and cubed fine and slightly mashed
  • 1 cucumber cut into thick slices
  • 2 teaspoons lime juice bottled or fresh squeezed
  • 1/4 teaspoon of garlic powder
  • sea salt or kosher salt to taste
  • freshly cracked black pepper to taste
  • grape tomatoes sliced ( this is a garnish for each one on top)
  • recipe can be doubled or tripled

Instructions

  1. Clean and wash then dry the cucumber, avocado, and tomatoes.
  2. and fruit. Juice lime.
  3. Peel avocado removing the skin.
  4. Mash avocado in a small bowl, add the lime juice, 1/4 teaspoon garlic powder, freshly grated black pepper, and salt to taste.
  5. Smash with a fork leaving some chunks.
  6. Slice cucumber in thick slices and slice the grape tomatoes thick round to place on top.
  7. Assembly:
  8. Start with cucumber on the bottom, add a tablespoon of the avocado mixture, top with sliced tomato.
  9. Serve them on chilled romaine lettuce for presentation (if you don't eat them all before they hit the plate.
  10. Perfect for the holiday Christmas table and a healthy snack any time of the day.
