Deep Fried Ricotta Appetizers
1/2 cup Ricotta cheese
1/4 cup shredded provolone or mozzarella (I like fontina too so any white hard cheese that melts well)
1 egg white
1 cup Italian flavored panko bread crumbs
1 tablespoon flour
1/4 teaspoon each oregano, basil, parsley, garlic powder
salt and pepper to taste
dash of cayenne pepper
canola oil
Whip egg whites until extremely stiff. Mix both cheeses together, together with the herbs, spices and salt and peppers.
Fold in the whipped egg whites.
Add in the flour and mix all together.
Make round balls by using a melon ball scooper, and then roll them in the panko bread crumbs.
Heat oil. Drop a little batter in the oil to see if it sizzles. Fry until golden brown. Serve hot with

How clever is this? I absolutely love this idea. I've never had them and there is nothing I like better than any kind of cheese, panko and deep frying. I shall ignore my veins and try these at once!

Is there anyway to make them a little more "firm"? They were delicious but mine didn't stay together that we'll. Did I not firm up the egg white enough? Or something else? Not enough mozzarella? Any suggestions?
ReplyDelete@Natalie... sorry they didn't stay together. I would suggest making sure you drain the Ricotta dry on a paper towel to sop up the moisture, maybe too much liquid, don't use extra large eggs and if that doesn't help add 1/4 cup grating cheese. I haven't had a problem using whole milk ricotta drained... hope that helps
