Pumpkin Bread Pudding was the best bread pudding flavor we ever had being huge pumpkin fans, and if you are too then this is going to be a huge win with one taste!


We were lucky to get this served to us on a trip we took to Arizona, one bite and we were hooked, we just couldn't get enough of this delicious pumpkin bread pudding it was so delicious.


It tastes just like pumpkin pie but in bread pudding form. It’s rich and creamy and delicious in every way.


We loved Arizona and actually got to eat many Southwestern foods we weren't accustomed to and everything new we tried was fantastic but this dessert stood in our mind and I couldn't wait it get their recipe to try it.


Luckily I was able to recreate the recipe from the ingredients almost perfectly to what we remember and this pumpkin bread pudding is almost spot on with a drizzle of caramel rum sauce on top.


As a bonus recipe, I also included a Ceviche Recipe we fell in love with, it's a delicious shrimp-style vegetable salad, that's so refreshing and bursting with flavor, I have also included it below.


Did I mention this is a perfect almost tastes like a Pumpkin Baked French Toast Casserole and perfect for a Thanksgiving breakfast treat?

Ingredients You Will Need

  • half and half
  • white and brown sugar
  • cinnamon, gingers, nutmeg
  • bread
  • eggs
  • vanilla
  • pumpkin puree

We stayed in Scottsdale and it was an incredible time.


Beautiful scenery and fantastic restaurants, scenic jeep rides, hiking so much to explore, and a wonderful experience.


We were lucky enough to be able to spend time with my cousin Lorraine and her family she made a fantastic spread of food fit for a King and that's where I was introduced to ceviche and couldn't wait to make it at home.


Arizona was a wonderful place to visit Scottsdale is a desert city in Arizona east of state capital Phoenix.

It's known for its spa resorts and golf courses, including TPC Scottsdale.

Farther north trails wind through McDowell Sonoran Preserve, a desert-scape of hills to admire, and many beautiful rock formations along with cacti.

Tips

  1. Best to use day-old bread
  2. this casserole can be made the day before and baked it the next day
  3. add pumpkin pie spice if you don't have all the ones listed
  4. pumpkin canned puree or fresh is a must, do not use pie fillings
  5. use heavy cream in place of half and half
  6. add mini chocolate chips on top for a garnish after the caramel drizzle

Arizona Vacation and Pumpkin Bread Pudding

This is a delicious dessert we had on a wonderful vacation called Pumpkin Bread Pudding that I recreated

Ingredients

  • 1/2 cup packed light brown sugar 
  • 1/2 cup granulated white
  •  1 teaspoon ground cinnamon 
  • 1/2 teaspoon ground nutmeg 
  • 1/2 teaspoon ground ginger
  •  1/8 teaspoon ground cloves
  •  1/4 teaspoon salt 
  • 4 large eggs 
  • 2 large egg yolks
  •  1 1/2 cups half and half 
  • 1 cup whole milk 
  • 1 (15 oz) can pumpkin 
  • 1 teaspoon vanilla extract 
  • 1  pound (16 ounce loaf) of egg bread, french bread or other crusty bread cut into  1-inch cubes

Instructions

  1. Grease a 13 x9 baking pan with butter.
  2. Preheat oven to 350 degrees. 
  3. In a medium-size mixing bowl whisk together brown sugar, white sugar, cinnamon, nutmeg, ginger, cloves, and salt. 
  4. Whisk in eggs and egg yolks. Stir in half and half, milk, pumpkin, and vanilla. 
  5. Add the cut-up bread cubes to another large mixing bowl.
  6. Add the half and half over the bread cubes and mix to combine.
  7.  Let this mixture sit for 10 minutes. 
  8. Pour into the prepared baking dish.
  9.  Bake in preheated oven until set, about 45 - 50 minutes. 
  10. Let cool for a few minutes then cut and serve caramel rum sauce or freshly whipped cream.
  11. Caramel Rum sauce:
  12. 1 cup dark brown sugar
  13. 1/2 cup butter
  14. 1/2 cup heavy cream
  15. 1/4 cup rum
  16. Combine all ingredients in a medium saucepan. Bring to a boil over medium heat, stirring occasionally.
  17. Turn burner to medium-low and let the sauce bubble for 3-4 minutes. Serve warm drizzled over the bread pudding.
  18. Caramel Rum Sauce 2:
  19. Easy Version:
  20. Unwrap 15 caramels and place them in a glass measuring cup. Add 2 tablespoons of rum and 1 tablespoon heavy cream or milk. Microwave 2 minutes stir and pour over the bread

  17. Wow - loved these photos. Thanks so much for sharing. You look great! I have been to Arizona - once driving through to our destination and home in Panama. It was so hot that day that I'm sure one could have fried an egg on the pavement practically. lol I liked Sedona. We slept overnight near the Grand Canyon - there had been a recent fire which I thought was so sad; hate to see that. That is an ENORMOUS cactus!!
