Freezer Peanut Butter Chicken Marinade is a great change of Asian American flavors using some simple pantry ingredients and of course, peanut butter is one of them!

Here is the second marinade in a series on my blog for the freezer series while I am away on our trip.

These Asian flavors are most picky kids' favorite flavors and a great way to get them to eat meat if they don't have food nut allergies.

We also would like you to try our tasty Garlic Freezer Chicken Marinade it's so versatile and it's for a whole roasting chicken.

I was a little skeptical about peanut butter with chicken but one bite and it was a tender delicious surprise.

The marinades always tenderize the chicken right in the freezer and no matter which method of cooking you choose, a juicy tasty meal will be served.

Check out this easy recipe, if you have picky eaters, you may be pleasantly surprised with the first bite of this one.

Using boneless chicken, pork or steak cubed make the best skewers for that outdoor barbecue, and also perfect for this freezer marinade.

Peanut Butter Marinade is so Tasty on any Meat!



This is one of several posts I have done on freezer marinades you may also like to try some of the others you will find at the bottom of this post.


Perfect after a busy day and then coming home and choosing an easy cooking method that is the easiest to use on your busy day.


Making these ahead of time is the perfect solution just remember to thaw them in the fridge first.


There are several ways to cook them after they thaw, fried, slow cooker, grilled, or broiled just to name a few!


One tip I do have if you have nut allergies, substitute sunflower seed butter.




Bake, Pan Fry, Grill, or Air Fry Methods for Chicken

  • NOTE: Check the chicken to be at 165 degrees using a meat thermometer in the thickest part:
  • Baked: Preheat the oven to 400 degrees. Place the coated chicken on a greased baking sheet. Spray with cooking oil or drizzle with vegetable oil. Bake for 20 minutes stirring a few times 
  • Grill: For kabobs, soak the skewers first in water for at least 30 minutes. Thread the chicken on the skewers and grill for 4 to 7 minutes on each side on a preheated grill. Use the sauce for dipping. Or leave the breasts whole and grill for 8 to 11 minutes.
  • Air Fry: Preheat the air fryer for 3 minutes at 400 degrees. Add the chicken and air fry for 5 minutes, flip and continue cooking in the air fryer until the internal temperature with an instant-read thermometer is at 165 degrees in the thickest part of the chicken (around 5 more minutes).
  • Slow Cooker: Put the chicken in the bottom of the crockpot. Pour thawed sauce liquid chicken. Cook on LOW for 6-8 hours or on HIGH for 4-6 hours or until done.
  • Sauteed: Place in a heated medium-size fry pan with 1 tablespoon olive oil, saute' for two to three minutes on each side for thin or longer depending on thickness. Cook until juices run clear and no pink remains.

  • ketchup
  • soy sauce
  • blackberry or plum jam
  • white vinegar
  • Worcestershire sauce
  • chili powder
  • garlic powder
  • pinch of cayenne pepper
  • pinch salt
  • boneless chicken breasts or thighs or another boneless meat
  • note: if using seafood just make this sauce with thawed fish do not add to the freezer it will start to cook the fish

Tips

  • cubed chicken is completed cooking quickly check the thickest part to be at 165 degrees using a meat thermometer, ( can be left whole and sliced in half or cubed)
  • for more spicy sauce add cayenne pepper and ground ginger to taste
  • chicken thighs  or breasts cubes or pork can be used but needs to be boneless 
  • always preheat the cooking pan you're using

Easy Peanut Butter Dipping Sauce



Nothing is easier than freezer marinades, and this dipping sauce is 1,2,3 mixed quickly in a bowl so there's nothing complicated.


The freezer does all the work for a tasty perfectly seasoned chicken cubed or whole boneless breast.


Any easy side dish will go perfect with this meal, nothing fancy just some ramen cooked noodles or white rice on the side would be a nice addition to this chicken dish.

This Freezer Peanut Chicken Marinade is perfect for a quick meal ready to grill, fry, or place in a slow cooker!

Ingredients

  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 1/2 teaspoons yellow curry powder
  • 1 1/2 teaspoons turmeric
  • 3 cloves garlic, minced
  • 1/2 teaspoon ginger ground
  • 1 tablespoon brown sugar
  • 1 tablespoon hoisin sauce
  • 2 pounds boneless, skinless chicken breasts or thigh, sliced in half or cut into 1-inch bite-sized pieces
  • 1 tablespoon olive oil
  • salt and black pepper, to taste
  • Peanut Sauce Ingredients:
  • 3 tablespoons creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 1/2 teaspoons dark brown sugar
  • 2 teaspoons chili sauce
  • 1 teaspoon granulated garlic powder

Instructions

  2. Freezer Marinade:
  3. Mix the coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar, and hoisin sauce together evenly.
  4. Place the cubed or sliced chicken breast in a plastic ziplock bag and freeze for up to 8 months.
  5. Thaw in the refrigerator when ready to use.
  6. Discard marinade and proceed to grill or choose another cooking method below under notes.
  7. Serve with the peanut dipping sauce.
  8. Peanut Sauce Directions:
  9. Add the peanut butter, soy sauce, lime juice, brown sugar, sauce, and spices to a small bowl.
  10. Stir in 2 tablespoons of water or more until smooth and of dipping consistency.
  11. Double the recipe if needed.
