Italian Roasted Chicken Legs Recipe Idea's

A less expensive part of the chicken that gets overlooked sometimes. The flavors, crispy skinned chicken can be eaten just like it is or used for so many other recipes if there are leftovers. Roasted chicken to top off a mixed greens salad, or into chili's. How about making a chicken salad sandwich or add some hot sauce to it with blue cheese, so versatile, so quick and easy!


8 to 12 chicken legs
parchment paper
cookie sheet
Heat your oven to 425 degrees. Place chicken legs on the parchment lined cookie sheet. Bake for around and hour or till golden browned and crispy.
Actually the chicken taste great with nothing on it, seriously, you can serve this with some sides and your good to go.

Some suggestions and variations:
barbecue sauce
hot sauce and blue cheese dressing
Ranch dressing
honey mustard

Sandwich Idea's:
Mix the chicken with blue cheese or ranch dressing and some hot sauce. Add to a grilled bun with some cheddar cheese.
Pull the chicken off the bone, add Parmesan black peppercorn dressing or use just mayonnaise, celery and some cayenne pepper,  for a quick chicken salad. Or try some chicken, ranch,  raisins, walnuts and chopped apples for a Waldorf salad on a multigrain bread.

Taking chicken off the bone you can add whatever you like to make a great orderves.

Appetizers:

 Slice some some baguette bread slices with tomato, chicken, top with provolone cheese, drizzle olive oil on top and bake or broil for a great appetizer. Or try some olives, chicken, cheese, tomato, bacon bits and avocado slices.

Salad greens never tasted so good until you added this roasted chicken after taking it off the bone! Try adding some mandarin oranges, chow mein noodles, chopped nuts or sesame seeds.

Have fun with this, you can make so many inexpensive meals with roasted chicken~ enjoy!

I am reminded of the guy at the grocers that said, we do not do leg quarters, nobody wants that cut of chicken anymore! Now I am seeing that this cut is making a comeback.
The chicken as you have prepared it by itself looks delicious enough. Your other suggestions are great but that I only if there are leftovers. I doubt if that would happen with these leg quarters-yum!

When I was little my dad had a rotisserie oven and I would watch the chicken spin around as the drippings fell to the bottom. Needless to say anytime I see a recipe for roasted chicken my mouth waters and I remember the smell and watching that chicken twirl around and around.

Nothing better than roasted chicken, you are so right... a good reminder to keep one or two bags precooked and ready to eat in the fridge at all times, so versatile is right

When my son was living in North Dakota, I filled his freezer with chicken wings for an easy meal - left him with recipes but never tried the hot sauce. Will need to add this to my chicken-leg-recipe-collection.
