Perfect served with any meal and they can be air fried, fried in oil, or baked.
Just around any riced vegetables will work great with this recipe if you're not a fan of broccoli.
These even freeze well and can be reheated and wrapped in foil in the oven for another meal.

Baked Broccoli Fritters
These are baked broccoli fritters with Italian herbs and spices and great snack or side dish
Prep time: 10 MinCook time: 25 MinTotal time: 35 Min
Ingredients
- 1 broccoli head cut into florets around 3 cups
- 1 large egg
- 3 tablespoons garlic
- 2 tablespoons Italian-flavored breadcrumbs
- 1 teaspoon granulated garlic powder
- 1/2 cup shredded blended Italian shredded cheese, cheddar or another you prefer
- salt, pepper, and cayenne pepper to taste
- 1 teaspoon oregano-dried or Italian-dried seasoning
- 1 tablespoon freshly chopped parsley
- Cooking Oil Spray
Instructions
- [reheat the oven to 375 degrees and line a baking sheet with parchment paper.
- Place the broccoli in a food processor or grate it to look like rice.
- Add that to a bowl with all the rest of the ingredients.
- Mix, and form patties.
- Note: if the mix seems a little too wet add more breadcrumbs, too dry add another egg
- Place on prepared baking sheet.
- Spray with cooking oil
- Bake for around 25 minutes or until golden.
- These can also be air fried at 400 degrees for 11 minutes or deep-fried in oil for around 4 minutes on each side.
