Cranberry Amaretto Holiday Gelatin Salad



Here's what I did to use up this whole Amaretto Cranberry sauce I made. It's a great side dish with any poultry meal~

1 large box cherry, or strawberry gelatin
1 cup hot water (if you haven't made the Amaretto Cranberry sauce, or you can use 3/4 cup hot water and 1/4 cup Amaretto)
1 homemade batch of Amaretto Cranberry Sauce or use a  (16 ounce) can whole cranberry sauce
1/2 cup diced celery
1/2 cup chopped apples I like Mcintosh
1/4 cup chopped pistachio or walnuts
8 ounces cream cheese, softened
Dissolve gelatin in hot water. Cool and chill slightly about an hour so it's  liquid wiggly not solid.

Break up cranberry sauce with a fork and add to gelatin with celery, apples and nuts. Fold in cream cheese. Pour into an 8-inch square pan or festive mold such as a Christmas Tree holiday mold. Refrigerate.

Delicious way to use up the extra cranberry sauce. While I am sure the sauce is great as is, your additions do make for more layers of flavor and texture. After eating a serving of this, I am sure I would want to make the cranberry sauce just so I could make this dish. Well done Claudia XOXOX

I love jello salads. This one has some great ingredients in there. I'll bet it's really good with the cream cheese.

now that's a festive jello combo, Amaretto flavored fruit sounds so good and I like it as a salad... we always do a sherry version, so I know this is great too...

You should an amaretto cookbook - your uses of it are spot-on delicious. This showcases so many flavors that combine well and produces happy diners.

One of the many things I dislike in the world is jell-o! BUT you did amazingly delicious things with it here and I wouldn't hesitate to eat this!

These days I seem to make jello only when someone is sick! But I love a good jello salad with lots of fruit...yours looks wonderful!
