Jenni's Favorite Southern Style Biscuits
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon sugar
1/4 cup shortening
2 tablespoons butter, chilled
1 cup milk
Heat oven to 450°. Adjust oven rack to center position.
In a large bowl, combine flour, baking powder, soda, and salt. Cut in chilled shortening and butter until you have pieces the size of small peas. Make a well in center of dry ingredients; pour in milk. With a wooden spoon, gently blend dry ingredients into the milk, just until mixture is clumping together. If necessary, add a few more teaspoons of milk.
Transfer dough to a floured board. Roll out in a circle about 1/2-inch thick. Using a 2 1/2 to 3-inch biscuit cutter, cut out and place on ungreased baking sheet or on parchment paper. Bake on center oven rack for about 10 to 12 minutes, until tops are browned.
Optional Herb Cheddar Garlic Biscuits
Add to raw dough, 1 cup of shredded sharp cheddar cheese and 1 teaspoon of garlic powder mix onto the after dough it is formed. Proceed with cutting and baking directions above.
After baked: In a small bowl, melt 1 tablespoon butter in the microwave for 10 seconds, then add 1 teaspoon chopped parsley, brush tops. Sprinkle with more shredded cheddar cheese till melted.
Southern Style white gravy to pour over biscuits:
1/2 lb ground sausage
2 tablespoons butter
4 tablespoons flour
3 cups cold
Fry the sausage until it's not pink and thoroughly cooked. Drain the grease on a paper towel, saving two tablespoons of sausage grease. Melt the butter in a clean fry pan, add the flour a little at a time over medium heat, whisking constantly.
Cook for about 2-3 minutes. Stir in cold milk a little at a time, whisking evenly. When thickened add sausage.
Add salt and pepper to taste.
