Zucchini Coconut Quick Bread Recipe

1 egg
1/2 cup vegetable oil
1 cup white sugar
1 cup grated zucchini
1/2 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 cup flaked coconut
1/2 cup chopped pecans
1/2 cup dried apples, raisins, craisins, or 1/2 cup milk or semi-sweet chocolate chips

Preheat the oven to 350 degrees.
 Grease one 9x5x3 inch loaf pan.
If using craisins or raisins, in a small pan boil one cup of water. 
Add craisins, and boil for two minutes. Drain.

In a mixing bowl beat egg, oil, and sugar. Stir in zucchini and vanilla.
In another bowl, measure flour, baking powder, soda, salt, cinnamon, nutmeg, coconut, pecans, and apples.
 ( craisins, raisins, or chocolate if using go in place of the apples). Stir to combine thoroughly. Pour all at once over batter in a mixing bowl. Stir to moisten. Turn into greased 9x5x3 inch loaf pan.
Bake at 350 degrees 
 for 1 hour until an inserted toothpick comes out clean. Cool in pan for 10 minutes. Turn out on a rack. Cool and wrap.

  1. I've already tried a zucchini cake and I loved it. Zucchini-coconut is a really unusual and very original combination. Your cake intrigues me a lot and I think it's really very good. I note the recipe, I want to try it as soon as possible. Bye, have a great week

  7. Last fall I made a bunch of ginger pumpkin bread...inspired by all of the ginger pumpkin bread I was buying at Starbucks everyday ... so I think I'm going to try this for something new but what do you think about walnuts over pecans...I'm not a big fan of pecans =)

  18. We love zucchini bread; but, I've never made it with coconut or chocolate. What a great idea! I have some zucchini in my fridge that is begging to be bread. I like the idea of splitting the batter and making more than one kind. Brilliant!
