Variety Picnic Cheesecake Cupcakes

One of the easiest and most posted recipes on the net, perfect for summer picnics, office parties and you can really be imaginative in creating your favorite toppings. Chocolate chips, white chips, nuts, marshmallow, favorite candy bars, preserves of any kind,  fruit slices,  to include fresh peach, cherry, mandarin orange, strawberry, raspberry, blueberry, pineapple just to name a few and caramel topping all make wonderful choices for your family and friends. Have ice cream toppings in the fridge? Mix and match and make several kinds to please everyone. They are easy, fun to make and sure to please a crowd.. This batch using smaller tin cups the size of the wafer made 30 cupcakes.

2 packages 8oz each of cream cheese softened
2 eggs
1 tablespoon pure vanilla extract
1/2 cup sugar plus 1 tablespoon
1 box nilla wafers
1 bottle of triple berry smuckers ice cream topping or jam
1 bottle of strawberry ice cream topping or jam

Mini Chocolate Chip Cheesecakes (my families favorite!)

Prepare tins.  Add paper liners to cupcake tins. Put wafers in each paper cup. Set aside.
In a separate bowl mix cream cheese, eggs, sugar and flavoring and beat till smooth and creamy no lumps.

Triple berry ice topping added to the batter and swirled

Using a ladle spoon onto wafers. Top with a teaspoon of toppings, swirl with the tip of a knife . Bake at 350 degree oven,  till the center is solid around 25 to 30 minutes.
