Mini Strawberry Blueberry Muffins

Let me start out by saying of course these can be full-sized Strawberry Blueberry Muffins instead of mini muffins

We love a full-size muffin for breakfast but this muffin is a dessert muffin because we also dip them in a delicious Kahlua Hot Fudge sauce when serving.

On memorable cruise vacations this a favorite sauce served on a midnight chocolate dessert buffet and I just had to recreate it.

The afternoon luncheon on an Island always was some kind of barbecued chicken, potato chips, and or potato salad, these were an exceptional treat later in the evening.

It took me a few times to get the recipe perfect but now these muffins and the sauce are spot-on perfections.

Of course, you can change the fruits to your liking and add any substitutions, and you can also make the sauce non-alcoholic if you prefer.

This is an all-made from scratch recipe, so do expect them to take a little more time than using any kind of premade mix.

Mini Muffins



We just love mini muffins for so many reasons, they travel well and the perfect small bite in a hurry for snacking on.


These really can be made into larger muffins but the kids really enjoy these little bite-sized muffins and seem to get eaten faster.


The muffins freeze well and also make a great dessert with our additional Kahlua Hot Fudge sauce served with them.


They're so versatile you can even just make these plain or add chocolate chips, coconut, dried fruits, or another favorite is chopped bananas.


If you're a muffin fan do try this version we just love this combination of flavors.

Ingredients You Will Need

  • flour
  • white or brown sugar
  • vanilla
  •  oil or butter
  • baking powder
  • baking soda
  • diced strawberry
  • blueberries
  • optional substitutions: cinnamon and sugar for garnishing, or add raisins, nuts, coconut, chocolate chips, dried fruits, pineapple, chopped cherries, chopped peaches, dates, figs, berries

Additional Suggestions (use around 1/2 cup)

  • drained chopped pineapple
  • coconut
  • raisins
  • macadamia nuts or other nuts you prefer
  • craisins
  • white chocolate chips
  • lemon or lime zest instead of orange
  • raspberries or other berries 
  • mango chopped or peaches
  • finely chopped apples with cinnamon added
  • chocolate chips, chopped toasted almonds, chocolate mini chips

Tips


  • two bowls will be needed to just gently fold the wet and dry ingredients
  • always preheat the oven
  • for best results do not use paper liners they will stick 
  • I use a non-stick muffin pan sprayed with cooking oil
  • do not over bake after 15 minutes check the middles with a toothpick
  • use ripe fruit this muffin is not very sweet the fruit will be sweetened it
  • nuts and raisins around 1/2 cup can be added in addition to the fruit
  • keep leftovers in the refrigerator in a tightly closed container with wax paper in between them
  • these muffins freeze well, thaw in the refrigerator or microwave one 7 seconds 
  • any fruits can be used
  • nuts or sunflower seeds can be added for extra crunch
  • for a less sweet muffin cut sugar by 1/4 cup

Besides being delicious these are super easy to make.

We love the combinations of strawberry, blueberry, or even red raspberries added then to dip into our Kahlua hot fudge sauce makes them a gourmet dessert so divine.

Again, they freeze well and easily transport for morning trips to work, perfect for day trips, school, or even an afternoon picnic at the beach.

Either way these muffins mini or large are delicious with a yummy sauce that awaits you.



Mini Strawberry Blueberry Muffins

Mini Strawberry Blueberry Muffins

A delightful little fruit muffin with a bonus Kahlua dipping sauce for adults-only dessert awaits you. Of course, you can just omit the sauce and have this mini-style breakfast muffin!

Ingredients

  • 2 cups all-purpose flour plus 2 teaspoons more for tossing with strawberries 
  • 2 teaspoons baking powder
  •  3/4 teaspoon salt
  •  1 stick or 1/2 cup unsalted butter, softened 
  • 1 cup white sugar 
  • 2 large eggs
  •  1-1/2 teaspoons vanilla extract 
  • 1/4 teaspoon almond extract 
  • 1/2 cup milk 
  • 1-1/4 cups diced strawberries
  • 1 cup blueberries
  • Optional: cinnamon and sugar mixture
  • Kahlua Sauce at the end of Instructions

Instructions

  1. Preheat the oven to 375 degrees,
  2. Prepare mini muffins pans you will need 2 or large muffins pan.
  3. Either grease the pan with oil spray your mini muffin pan or line with paper liners.
  4. In a large bowl blend together whisking flour baking powder and salt and set aside
  5. Using another bowl, cream the butter and sugar for about 2 minutes with an electric beater.
  6. Add the eggs and vanilla, almond extract then fold in the flour mixture. alternating with the milk and ending with the flour.
  7. Toss 2 cups of the berries with 2 teaspoons of flour (this will keep them from sinking to the bottom).
  8. Set 1/2 cup of the berries for garnishing the tops before baking.
  9. Gently fold the 2 cups of berries into the batter.
  10. Bake at 375 for around 30 minutes, until lightly golden and a toothpick comes out clean.
  11. Cool muffins completely.
  12. These muffins freeze well, just freeze them on a cookie sheet until solid and add to freezer bags for up to 3 months.
  13. Kahlua Dipping Sauce:
  14. 1 (14 ounces) can sweetened condensed milk
  15. 2 (1 ounce) squares unsweetened chocolate, chopped
  16. 1/8 teaspoon salt
  17. 1/3 cup water
  18. 1/2 teaspoon pure vanilla
  19. 1 tablespoon of Kahlua  or more to taste
  20. Note: for non-alcohol omit Kahlua  just add  all vanilla 1 1/2 tablespoons
  21. Combine condensed milk, chocolate, and salt on top of a double boiler over rapidly boiling water. Stir and cook until chocolate melts and the mixture thickens about 10 minutes.
  22. Remove from heat and stir in water, a little at a time, until sauce reaches desired consistency. Cool slightly and stir in vanilla add Kahlua.
