Italian Avocado Fries Recipe

Italian Avocado Fries Recipe
Yield: 12
Author: Claudia Lamascolo
Prep time: 10 MinCook time: 1 MinTotal time: 11 Min
These are delicious appetizers or snacks using avocado dipped in seasoned breadcrumbs and then fried.

Ingredients

  • 2 large avocados, cut into 6-8 slices lengthwise (for each avocado)
  • canola oil for frying
  • 2 cups of panko Italian-flavored breadcrumbs with 1 tablespoon of Parmesan cheese grated
  • 1 egg, beaten
  • 1 cup of flour seasoned with 1/4 teaspoon each, cayenne pepper, black pepper, garlic powder, oregano, basil, parsley, salt

Instructions

  1. Add the flour, egg, and panko Italian breadcrumbs into three pie plates separately.
  2. Using a fryer or deep wok-style pan, pour enough heat around 1 inch of oil into a frying pan or deep fryer on medium heat.
  3. Take one slice of avocado, and coat it in the egg mixture.
  4. Dip the avocado into the flour, then the egg, then into the panko last.
  5. Cook avocado until the breadcrumb turns golden brown in a single form.
  6. These will not take long to cook around 30 to 40 seconds on each side, make sure you turn them for even cooking.
  7. Repeat with remaining avocado slices.
  8. Serve with fresh salsa to dip in.
  9. Note: I have baked these as well for a healthier version.
  10. Place on parchment paper and only drizzle with olive oil lightly or spray with cooking oil.
  11. Bake at 400 degrees until browned turning once with a spatula 12 to 15 minutes.
