Easy Casseroles
I love all in one pan casseroles, just brown the meat, add the ingredients to the casserole and bake for 25 minutes that's it, super delicious and simple recipe.
I sometimes use a blend of all kinds of beans and leftover chili, it's the perfect way to get rid of leftovers for sure!
Mexican Frito Casserole

This is a casserole using corn chips, chili, beans and baked until it hot and the cheese is bubbling.
Ingredients
- 1 pound ground beef
- 1 onion chopped fine
- 4 ounce can of green chiles chopped
- 1/4 cup black olives sliced or more to taste
- 2 cups of homemade chili(or 16 ounces of chili canned)
- 16-ounce can of chili beans ( pinto beans or black beans)
- can of corn drained
- 1 cup salsa
- 1 tablespoon of taco seasoning
- 1 bag of corn chips like Fritos
- 2 cups extra sharp cheese shredded or a Mexican blended cheese
- garnish suggestions: jalapeno peppers and more sliced olives, extra cheese, avocado sliced, salsa, sour cream
Instructions
- Preheat oven to 350 degrees.
- In a large skillet, brown the ground beef and onions until the pink is gone and the onions become transparent.
- Drain the grease.
- Stir in chiles, olives, chili, chili beans, corn, salsa, and taco seasoning.
- Bring to a simmer for about 10 minutes, stirring often.
- Crush the corn chips and spread half of them evenly in a 9x13 deep baking dish.
- Add chili mixture and top with remaining crushed chips.
- Bake for 25 minutes.
- Add cheese and bake an additional 10 minutes or until cheese is melted.
- Note for crispier cheese broil on high for 1 minute.

ReplyDeleteThis is so similar to one of my favorite meals my aunt used to make for my sister and I when we were growing up. We called it "nacho salad" though it was more like taco salad, and less like salad, and more like nachos with ground meat in taco seasoning, haha. Very similar to this. Ooooh, now I'm craving that :)
