Cheesy Garlic Smashed Potatoes and Carrots

One of our favorite side dishes, cheesey, rich and goes great with any meat!

4 boiling potatoes cubed
1 cup carrots
1/2 light sour cream
1/2 teaspoon garlic powder
1 clove of roasted garlic
1 tablespoon olive oil or butter
1 tablespoon parsley
1/2 cup shredded sharp cheddar
extra sharp cheddar for on top
1 tablespoon parmesan cheese

Boil potatoes and carrots together. Drain, place in a large bowl and smash together with a potato masher or hand held blender. Leave chunky. Stir in  sour cream, olive oil or butter, cheeses, herbs and garlic. Place into a baking dish, top with more cheese. Bake at 350 until cheese is melted

Potatoes are my weakness, along with chocolates and bread! Just love theses loaded taters!

Gosh, this looks excellent! And the additional carrots take a wee bit of guilt out of eating cheesy potatoes ;)

Honey avoids carrots, but that would not happen here. Thanks these look great and I always have these staples in my kitchen.

Wow, Claudia-You got a long of things going on in that oven of yours besides the Cheesy Garlic Smashed Potatoes.

I see your roasted broccoli, and a tart shell...yumm!!!
Love the way you combined all these delicious and tempting things...of course, the garlic, and the cheddar cheese...my weakness!!!

Cheese + potatoes = instant happiness. The carrots make me smile - the sour cream makes me hungry.

Mashed potatoes are one of my all time favorite side dishes. I usually like mine with lots of sour cream and cheese, not unsimilar from yours but with the addition of roasted garlic and carrots, yours is simply outstanding! Gotta try it :)

Hi Claudia

I am sure this dish of yours tastes really nice. I love cheddar and parmesan cheese used with garlic powder. Great combination of ingredients.

Claudia, you come up with the BEST, most original things. Who would have thought to add carrots into something like this? You are truly an original, this looks SCRUMPTIOUS!
Best,

I should be focused on light dinner salads now -- I'm up a couple of pounds -- but oh I'd rather have this instead. Looks fabulous, Claudia!

I could just eat this and be totally satisfied. The Mr. however would probably want some meat/poultry with his. Either way this is delicious.

I used to make mashed potatoes with carrots and garlic all the time! It's one of those forgotten dishes that I don't know why I ever stopped making. I love this with the cheese! Carbilicious! Thanks for the reminder.
