Baked Zucchini Fries Recipe

A great appetizer

3 small zucchini
1/4 cup Grated parmesan cheese
1 cup panko bread crumbs season with 1/2 teaspoon each of garlic powder, oregano, basil and parsley
1/4 cup Italian flavored breadcrumbs
1/4 cup olive oil
Heat oven to 400 degrees.

Trim, wash and cut off the ends of the zucchini. Cut into long sticks even in length, about 1/4 inch thickness. In a large plastic bag  add  herbs, cheese,  Italian breadcrumbs and panko shake well. Place oil in a pie plate.  Add zucchini to pie plate to coat with oil.  Place half the bread crumbs scattered on a parchment lined cookie sheet. Use tongs to place zucchini on top of breadcrumbs on baking sheet, dripping off excess oil back into the pie plate. Sprinkle with remaining panko breadcrumbs mixture on top to coat the zucchini. Bake until golden brown they do not usally need turning the oil will crisp them.  Serve with Italian marinara sauce.

Great idea to bake these...especially when fries relate to healthy zucchini.
I've never made these.
I was wondering about the oven temp. you used and also did you put the oven rack at the very bottom? Thanks for responding when you have a chance.

Have a great day,
Claudia

Claudia, great idea! I'm always looking for healthier appetizers to serve! It will be a great addition to an antipasta platter.

These look crazy good - so many different dips would go well with it, too.

Baked instead of fried is just the icing on the cake.

Oh, I might get my family to eat zucchini if I use this recipe! Boy, do these look wonderful~

You were on my list to tag for the Easter post, but I figured you were already tagged (and knowing you, you had a fabulous Easter compilation ready to go!). I'd love to add you to my list if you haven't been contacted :)

I make these every summer - but not with Panko - grand idea and I will be doing it.

I love zucchini fries...they are one of my all time appetizers. I remember about 30 years ago, a sweet little Italian lady (friend of family) gave me the recipe and instruction, but that was for deep frying, and in those days they didn't have Panko.
Love your new take on it, Claudia, and the Marinara dipping sauce, as well:D
Thanks for sharing!

Well, I bought the zucchini and used your recipe as a framework. I didn't have breadcrumbs, so I had to improvise and make my own. As I expected this was really good. Thanks for the rcipe, idea, and motivation.
