Zucchini Bars with Cream Cheese Frosting

If you are looking for a recipe to use up zucchini you just found the jackpot of easy desserts that taste gourmet.

These easy to make zucchini bars are the flavors of fall just before it sets in when you welcome cooler weather.

Growing up dad always had a garden and we couldn't wait for mom to make us these delicious zucchini bars.

These will always be a loved dessert and memory of dad, our garden and childhood favorite desserts.

Sometimes the simpliest desserts made with love can you bring you back in time to relive those precious moments and for me this is one of them.

Dad always like these dusted with powdered sugar so mom would do half with frosting and the other half with a sprinke of that white powdered sugar for him.













Ingredients for Zucchini Bars with Cream Cheese Frosting:

  1. flour
  2. brown sugar
  3. sugar
  4. baking soda
  5. baking powder
  6. cinnamon
  7. salt
  8. vanilla
  9. pumpkin pie spice
  10. eggs
  11. canola oil or vegetable
  12. applesauce
  13. zucchini, shredded
  14. Optional: 1/2 cup coarsely chopped walnuts and 1/2 cup dark raisins or for a different flavor add 1/2 cup coconut with chopped pecans

Cream cheese frosting zucchini bars, all made from scratch and decadently moist!

Ingredients

  • 2 cups AP flour
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 3/4 teaspoon baking soda
  • 2 teaspoon baking powder
  • 2 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon pumpkin pie spice
  • 2 large Eggs
  • 1/2 cup canola oil or vegetable
  • 1/2 cup applesauce
  • 2 cups zucchini, shredded
  • Optional: 1/2 cup coarsely chopped walnuts and 1/2 cup dark raisins or for a different flavor add 1/2 cup coconut with chopped pecans

Instructions

  1. Add all dry ingredients together.
  2. Stir in zucchini.
  3. Using a spatula pour into a parchment-lined baking sheet (brownie-sized pan) jelly-roll baking sheet.
  4. Bake at 350 for around 30 minutes or until the center is solid.
  5. Cool completely.
  6. OptionaL Garnish with powdered sugar or frosting recipe below
  7. Frosting
  8. 8 ounces of cream cheese softened
  9. 1 cup butter at room temperature
  10. 4 cups powdered sugar
  11. 1 tablespoon cream or milk
  12. Beat together, and spread on cooled bars.
