Roasted Broccoli and Carrots with Garlic

Before Roasting

1 pound broccoli, rinsed and trimmed
4 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon each  kosher salt, oregano, basil, parsley, garlic powder and lemon juice
1/4 teaspoon freshly ground black pepper
1/3 cup  Italian flavored bread crumbs
1/4 cup finely grated romano cheese


Preheat oven to 425 degrees F.
Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, all spices and mix together well.
Spread the mixture into a metal cake pan or deeper cookie sheet lined with parchment paper and sprinkle generously with bread crumbs and grated cheese.  Roast in the oven till browned and tender, turning once while cooking. Serve hot with more grating cheese.  Next time I am adding peppers for additional flavors, I wish I had thought of that first! this was absolutely wonderful!
