1/3 of a cup (3 oz) quick oats
1/4 cup firmly packed light brown sugar
1 teaspoon cinnamon
1/2 cup butter chilled
8 oz cream cheese
1/4 cup sugar
2 eggs
2 Tablespoons (total of mixed)grated lemon zest and orange zest together
1 teaspoon vanilla extract
1 1/2 cups fresh blueberries
Preheat oven to 350. Spray an 11” x 7”-inch baking pan with non-stick cooking spray.
Place oats in a food processor and pulse till fine. Add to the processor together with ground oats, flour, brown sugar and cinnamon. Add butter (or you can use two forks or a pastry blender) add 2 tablespoons of water until mixture forms a crumbly dough. Press dough into the bottom of oil sprayed pan, bake 10 minutes.
In a small bowl, with electric mixer on high speed, beat cream cheese and sugar until fluffy. Add eggs, zest and vanilla; beat until smooth. Pour cream cheese mixture over particle baked crust, sprinkle blueberries over the cream cheese mixture evenly. Bake for 25 – 30 minutes at 350 degrees, until set. Cool completely on wire rack before cutting into 12 equal bars.
