The first time I made these, I fell in love.


Not only do these Blueberry Cheesecake Bars taste fantastic, but they are also so easy to make.

  • firmly packed light brown sugar
  • cinnamon
  • butter chilled

    These little cheesecake squares are chock full of sweet blueberries and perfect treat anytime. If you love cheesecake, these easy squares will be your new go-to recipe.

    ingredients:

    • 1 1/2 cups flour
    • 1/3 of a cup (3 oz) quick oats
    • 1/4 cup firmly packed light brown sugar
    • 1 teaspoon cinnamon
    • 1/2 cup butter chilled
    • 8 oz cream cheese
    • 1/4 cup sugar
    • 2 eggs
    • 2 Tablespoons (total of mixed)grated lemon zest and orange zest together
    • 1 teaspoon vanilla extract
    • 1 1/2 cups fresh blueberries or substitute your favorite fruit

    instructions:

    How to cook Blueberry Cheesecake Bars

    1. Preheat oven to 350. Spray an 11” x 7”-inch baking pan with non-stick cooking spray.
    2. Place oats in a food processor and pulse till fine. 
    3. Add to the processor together with ground oats, flour, brown sugar, and cinnamon. 
    4. Add butter (or you can use two forks or a pastry blender) add 2 tablespoons of water until mixture forms a crumbly dough. 
    5. Press dough into the bottom of oil sprayed pan, bake 10 minutes.
    6. In a small bowl, with electric mixer on high speed, beat cream cheese and sugar until fluffy.
    7.  Add eggs, zest, and vanilla; beat until smooth. 
    8. Pour cream cheese mixture over particle baked crust, sprinkle blueberries over the cream cheese mixture evenly. 
    9. Bake for 25 – 30 minutes at 350 degrees, until set. 
    10. Cool completely on a wire rack before cutting into 12 equal bars.
