Strawberry, Blueberry, Banana Bread Pudding with Rum Sauce






1 ripe bananas, finely sliced
1 cup sliced strawberries
1 cup blueberries washed
1/2 cup brown sugar, divided
7 slices Italian day old bread
2 cups evaporated milk
4 eggs beaten
1 teaspoon pure vanilla extract
Pinch of salt
Bake at 350 till browned and crisp looking. Serve with whipped cream and Strawberry Rum Sauce below.

Strawberry Sauce
2 cups of fresh strawberries
2 tablespoons white rum
2 tablespoons sugar
1/2 teaspoon lime juice

Add everything to a foodprocessor and blend till  chunky but mostly smooth. Refrigerate for at least 30 minutes before serving.

This looks delicious Claudia. Love the banana in there giving the texture that feels like this time of year. You might make a bunch of this (and keep the rum out). It's -12 degrees in Colorado and the horrid storm is headed your direction I'm sorry to say!

It's the rum sauce that makes it! Makes the fruit a wee bit wicked. As I stare at yet another snowfall, this brings me to summer and light and I thank you for that.
