Italian Cream Cheese Herb and Parmesan Mashed Potato Recipe

Always goes great with Ham, Pork or Poultry~ not much to say these go great with every meat! Even leftovers are great to use in croquettes or topping for a Sheperd's Pie!

 5  creamy white boiling potatoes peeled cut up and boiled till soft
 1/2 teaspoon minced garlic
 4 tablespoons sour cream
 3 tablespoon cream cheese
 1 stick of butter
1/2 teaspoon each, parsley, garlic powder, salt, pepper
1/4 teaspoon oregano, basil and dash of cayenne pepper
1/4 cup of grated Parmesan cheese
 1/2 cup milk, heavy cream, half and half (light or regular any will work fine)
Italian bread crumbs and shredded mozzarella optional
In a heavy industrial mixer, add cooked potatoes, sour cream, cream cheese, herbs, 1/2 stick of butter and garlic. Beat till smooth, add a little milk at a time to reach desired consistency.  Top with a Tablespoon of butter and more parsley and cheese.Optional:( Sprinkle with Italian Bread crumbs mixed with melted butter for a crunchy topping)... Bake in the oven or microwave until reheated.

The potatoes sound delicious. I'm so glad I found your blog. I grew up in a town that was about half Italian and the food I was exposed to at my parents friends homes was usually cooked by the grandmothers who could barely speak English. Living where I do, there is very little good Italian, so hopefully I can learn from you how to make it at home and you can pass it on to me as well.

Mashed potatoes are easily one of my favorite potato dishes! I often use sour cream in there (my favorite) but have never tried cream cheese! This looks so creamy and delicious!

OK Claudia, just load up the potatoes...cream cheese, sour cream, and butter...OMG, another 30 more minutes on the treadmill for me.

glad to see you beating and I mean really beating your potatoes, I think it is important to bind the hot meal of potatoes with its starch creating a much better consistency - love the flavors in here, love 'em a whole lot
