Crockpot Pork and Pineapple Polynesian Style

Amazing how quick and easy this dish is. Boil some white rice and viola a delicious meal when you come home from a long days work!

4 to 6 boneless pork loin chops.
1 can of pineapple rings or chunks with juice
1/2 cup pineapple juice canned or fresh
1/4 cup brown sugar
4 tablespoons soy sauce
1 green bell pepper sliced lengthwise
1/4 teaspoon  garlic powder
salt, pepper to taste

2 cups of cooked white rice

In a oil  sprayed or (lined with disposable bags) crockpot, add pork, pineapple, sugar and peppers and spices. Cook on low for 6 to 8 hours.
Boil 2 cups of white rice. Pour pork chop mixture over rice and serve.

Mmmm....simple and delicious. I love pineapple cooked with meat, too. It's also delicious cooked in curry. Great to go with rice.

This is going to go into rotation sometime in December - my kids adore this combination and I would like to surprise this with them on a chilly eve when they've been in the lab till 8 p.m. and come home tired and cranky. This will turn the crank around!

Looks like a fast, yummy, and exotic meal! I don't have a crockpot, but I probably should invest in one soon :)

I love a sweet/salty combo. Another bookmarked! I wanted to let you know that I prepared your cranberry salad for Thanksgiving and everyone raved. Said "best ever". It will be my yearly tradition now. Thanks for a great recipe.

This sounds great and looks darn inviting too! I should keep my crock pot on top of the counter instead of inside. Maybe then I'll use it more often :)

I'm going to try something like this with tofu. I absolutely love cooking with pineapple. My mom developed an allergy to it late in life and I'm praying that never happens to me!
