This simple to make Breakfast Bacon, Egg and Cheese Burritos are so easy to make, perfect to make ahead of time, freeze them then just pop them in the microwave to reheat for a no fuss breakfast in a hurry.

This versatile filled burrito can have anything your family likes inside from eggs, cheeses, sausage, bacon, ham and are basic recipe will give you all those suggestions.

For weekend guests or a family brunch these are perfect just set up a topping bar and let make a self serve breakfast with all our garnish suggestions below.

Making all 10 of these can be frozen, thawed and popped in the microwave for until warmed up and you're ready to go on those busy morning serving a delicious breakfast.

  • diced or sliced tomatoes

Quesadilla

Any shredded cheeses, jalapeno peppers, olives, or whatever cooked meats you like.

Leftover Thanksgiving Turkey

Sliced turkey with leftover cranberry sauce, Romaine lettuce, your favorite cheese.

Steak and Beef

Sliced leftover roast beef or steak can be used for Philly tortilla wraps just add onions, peppers, and cheeses.

Rotisserie chicken:

Ceasar style wraps with dressing: cooked chicken shreds of Parmesan cheese and romaine lettuce
Buffalo chicken hot pockets; cooked chicken, buffalo sauce, blue cheese chopped and sharp cheddar
Cordon Blue: ham, cheese, cooked chicken

Leftover Hamburgers and Hotdogs:

Cheesedogs: Hotdogs sliced with shredded cheese or a dollop of chili for chili cheese dogs
Hotdogs cut up with sauerkraut, Dubliner cheese shredded, spicy brown mustard

These are perfect with so many kinds of fillings whether it's spinach and eggs with hollandaise sauce or something as simple as cheese and egg, no problem, these little burritos will be your go to for a busy life style!

Breakfast Bacon and Egg and Cheese Burrito

These flour burritos can be made quickly and frozen on a cookie sheet for a quick breakfast in the morning.

Ingredients

  • 12 strips of crispy bacon
  • 12 eggs
  • 1 stick of butter
  • salt, and pepper to taste
  • 10 flour tortilla wrappers of any flavor
  • 2 cups of freshly grated jack or sharp white cheddar cheese
  • Garnish Topping:
  • sour cream, avocado, sliced tomatoes, fancy greens, chopped celery, onions diced, salsa, chopped peppers of any kind, more shredded cheese on top a Mexican blend

Instructions

  1. Fry the bacon in a skillet or bake it at 400 degrees on a cookie sheet until crispy drain the grease and cool.
  2. Whisk the egg until frothy and blended.
  3. In a large skillet melt the butter on medium heat.
  4. Add the eggs, and keep stirring them until all of the eggs are formed together and cooked.
  5. Salt and pepper to taste.
  6. Fill each tortilla with cheese, bacon, and egg.
  7. Roll up the tortilla tucking in the sides these can be eaten just as is, warmed for the cheese to melt, or for crispy cooking methods see below.
  8. Freezing Burritos:
  9. This makes 10 burritos and if this is too much for your family, place them on a wax-papered cookie sheet and freeze until solid.
  10. Add to a freezer bag and reheat in foil in the oven for another time.
  11. Alternative method: thaw first and microwave for 15 seconds turn and heat the other side for another 30 seconds
  12. Cooking methods for Crispy Burritos:
  13. Roll up the tortilla tucking in the sides.
  14. Broil: add them to a cooking sheet and broil on high 2 minutes on each start
  15. Baked: Place either on a baking sheet at 400 degrees until the shells get crispy around 11 minutes.
  16. Air fry them at 400 degrees for 7 minutes until these start to brown on top.
  17. Pan Fry: melt some butter and brown the burritos in the butter for around 3 minutes on each side.
