We are huge avocado fans, not just because it's a healthy fat and it tastes good, but it's perfect for a light meal or snack plus this bruschetta has several alternatives you can use this topping for with all our suggestions below.


Not only do we have a delicious topping for garlic bread, crackers and so much more, but we also share our favorite guacamole dip recipe below in our printable recipe card for you also!


Summer heat certainly gives you a reason not to cook and this stays cool light bruschetta meal will do the trick and it can become a totally satisfying meal with all our additions you can add in an instant!


Just a little dicing and chopping and you'll be on your way to a healthy delicious anytime appetizer or meal with hardly any fussing at all.


Keep in mind to just buy nice ripe ready to eat sweet summer's bounty vegetables and fruits and also whatever you're not fond off leave it out and substitute another from our suggestions list.

Avocado Bruschetta Topping and Guacamole Dip

Avocado Bruschetta Topping and Guacamole Dip

Two recipes one for a topping for Bruschetta with a blend of olives, tomato, and mozzarella plus a recipe for Guacamole dip

Ingredients

  • 2 ripe avocados cubed into small pieces or mashed
  • 1 lime juiced
  • 2 ripe vine tomatoes or chopped plum tomatoes
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons kalamata pitted slices or chopped olives
  • 2 tablespoons extra virgin olive oil
  • sea salt and freshly cracked black pepper to taste
  • 6 slices of Italian bread cut in half, or use a sliced baguette or stick French bread cut 1/2 inch thick and made into garlic bread
  • Optional for more flavor add 2 tablespoons pesto sauce
  • Garnish: fresh basil leaves, lime slices, drizzle with more olive oil

Instructions

  1. Mash avocado, add pesto sauce, oil, salt pepper, and some chopped basil on top for garnish if you like.
  2. Make the garlic toast and set it aside.
  3. Spread with avocado topping, and serve, garnish with fresh basil.
  4. For Avocado Guacamole Dip:
  5. 2 ripe avocados
  6. 1 teaspoon seasalt
  7. 1 1/2 teaspoons fresh lemon juice
  8. 1 teaspoon fresh lime juice
  9. 1 teaspoon Worcestershire sauce
  10. 3 cloves finely minced garlic
  11. 1/3 teaspoon cayenne red pepper
  12. 2 dashes of hot pepper sauce (optional)
  13. Wash, peel, pit, and mash avocados. Add finely minced garlic.
  14. Add remaining ingredients. This can be made in a food processor or using a blender.
  15. Serve with crackers and tortilla chips, sliced cucumbers, sliced zucchini, or any other vegetable you like for dipping.
  16. Makes about 1 1/2 cups.
