Fresh Italian Broccoli Rabe
1 bunch of broccoli rabe washed and stems cut, (boil first for 1/2 hour and then sauteed in garlic and olive oil) in the above link recipe
4 links of sausage sliced and sauteed
2 teaspoons additional minced garlic
1/2 cup of fresh mushrooms
2 cups mozzarella shredded
4 tablespoons grating cheese
extra virgin olive oil
2 tablespoon Marsala wine
In non stick pan add 4 tablespoons of extra virgin olive oil, saute garlic, add sausage, mushrooms saute for 4 minutes, drain sausage oil out. In the same pan, add 2 tablespoon of Marsala wine, stir in cooked broccoli rabe, mix everything together well. Stretch out dough with floured hands, rest for around two minutes to a 12x8x 1/4 inch rectangle. Evenly spread on the dough broccoli rabe mixture, add mozzarella and grating cheese on top. Roll up like a jelly roll tight, pinching both ends together to seal. Place on oiled sheet of foil with 1 tablespoon of olive oil, then onto a cookie sheet and bake on a 400 degree oven till browned around 40 minutes.
