This is the perfect party cake for adults, however, our Pina Colada Pineapple Rum Poke Cake can have substitutions for alcohol that's in the cake.


The flavor of this cake takes on the popular cocktail you find all over the Caribbean and is a delicious addition to any pineapple coconut rum lover in flavor.


Over the years we adapted the cake using all pineapple juice and fresh pineapple, and also added rum extract instead of the alcohol, so adapt this recipe to your dietary needs.


This Pina Colada kind of a cocktail cake just may become one of your favorite desserts for all you tropical drink lovers out there!

Easy Steps

  1. Bake a package of cake mix to directions (except substitute half water half rum)
  2. mix the filling ingredients together
  3. poke holes in the cake
  4. pour this mixture over the cake
  5. top with whipped cream and coconut

Tips

A doctored cake mix with a creamy rum, pineapple, and whipped cream confection is so good you can't put your fork down!

Ingredients

  • 1 boxed package of cake mix white, or coconut flavored, pineapple or yellow
  • Use ingredients directed on the package box except for substituting some of the liquid (use half water half rum or half pineapple juice half water for nonalcohol)
  • 1 (8 - ounce) can creme de coconut
  • 1 (8 - ounce) can sweetened condensed milk
  • 1 cup shredded coconut
  • 1 (16 - ounce) container whipped topping
  • 1 lb can crushed pineapple or fresh pineapple cored and cleaned put in food processor around you will need at least 16 ounces from freshly cut
  • Regular White Rum or (Pineapple flavored Rum is recommended)

Instructions

  1. Preheat the oven to 350 degrees.
  2. I use a 13x9 cake pan or 2 9x9 cake pans.
  3. Prepare the cake mix bake as directed on the box.
  4. While baking mix the filling.
  5. In a separate clean bowl mix condensed milk, and creme of coconut together, and add 2 tablespoons of rum to that mixture.
  6. When the cake is done remove it from the oven.
  7. Poke holes in the cake while hot, pour this over a hot cake, at this point you can add crushed or fresh pineapple to the cake.
  8. When cool, frost with whipped creme and sprinkle with coconut.
