Italian Style Apple Cinnamon Bread Pudding

As a little girl grandma always knew how to make plain day old bread into something spectacular! Bread Pudding is delicious, light and perfect to warm you up in the morning.... with a hint of almond and cinnamon flavors, your family will love this comfort breakfast. Cherished memories are made through the love of cooking, and this is another one of those for us.

Set onto a deep cookie sheet filled with water around 1/2 inch deep.

Pour egg mixture over broken pieces of Italian bread and sliced apples with cinnamon. Grandma used to make this when we were kids with leftover Italian bread, another great way to make use of stale bread~

Mix together thoroughly .

Whisk eggs into hot mixture making sure all flavors are combined.

Layer bread and peeled and cored apples in a over proof dish. Sprinkle with cinnamon I always add extra, we love cinnamon, add and the raisins and cranberries if using.

Using a microwave proof container, melt butter with sugar and milk.

We always make this with the cooler weather, and this is one of those wonderful recipes that you normally have all the ingredients in the house for.

Recipes easily can be doubled:
4 cups Italian day old bread, torn into small pieces
2 1/2 teaspoons ground cinnamon
3 large McIntosh apples, peeled, cored, and sliced
1/4 cup raisins or chopped dried cranberries, optional
2 cups milk
1 cup brown sugar
3 tablespoons butter
3 eggs
1 teaspoon pure vanilla
1teaspoon pure almond extract
I butter a glass baking dish by putting two tablespoons of butter in the bottom 11x7-inch stick in oven to melt the butter for 10 minutes on 350.
In a large bowl, combine bread, cinnamon, and apple slices, add raisins at this point if using. In microwave safe bowl, combine milk, brown sugar, and butter. Microwave until milk is hot and butter is melted.
Whisk eggs with vanilla in another bowl. Remove milk mixture from microwave and whisk in the hot milk. Pour the mixture over the bread apples, and sprinkle with cinnamon.
Pour bread mixture into the prepared baking dish. Set a water filled large shallow cookie sheet in oven and put the bread pudding pan inside the larger pan. About 1/2-inch. Bake for 40 to 50 minutes, or until a knife inserted near center comes out clean.
You can serve this with whipped cream or its delicious plain.
