Italian Pizzelle Waffle Cookie Recipe For An Old Fashioned Christmas








This recipe has been in our family for well over a hundred years. Grandma made these every year till she passed at 94. Now we carry on this tradition every Christmas, I usually make several of them ahead of time, put wax paper between, stack them and freeze in plastic bags, these never got soft as some recipes do. These light waffle style cookies are great anytime of the year. In years past we used an old fashion cast iron mold poured the batter into the mold and baked them. She also made some other kinds of flowers with a hot waffle iron that were almost like a fritter batter, you would dip the hot iron into thin batter and deep fry what looked like flowers and then sprinkled with powdered sugar like the pizzelles. It just wouldn't be Christmas without these special pizzelle cookies and making them in grandma's memory. Now with modern technology, you can buy these relatively cheap online and electric pizzelle makers result in perfect size and color.

Stack with wax paper, these are a delicate waffle and are very fragile.





Using a full gravy ladle, its holds the perfect amount of pizzelle batter for each cookie. Then when they are lightly browned lift off with a plastic spatula.







The batter is pretty thick as you can see it holds on to the spatula.


You can purchase the pizzelle online. Always make sure you lightly grease before making each pizzelle cookie.

Now with modern technology, you can buy these relatively inexpensive online and electric pizzelle makers result in perfect size and color.
Pizzelle
Makes approx. 3 dozen
6 eggs
1/4 cup butter
1/4 cup oil
1/4 shortening
1 1/2 cups sugar
Pinch of salt
2 teaspoons baking powder
1 teaspoon anise extract or lemon, almond, coconut, orange flavorings
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
 Beat the eggs on medium speed until thick. Add the oil, shortening and softened butter and mix until combined well. Add the extracts, ( you can add any flavor you want, lemon or coconut can be used however, traditionally anise is the flavor. Reduce the speed to low and gradually add the flour, mix till well Incorporated.  Preheat the electric pizzelle iron according to the manufacturer’s directions ( can be found online). When ready, drop batter by heaping tablespoon, again follow the pizzelle manual.
 When ready, open iron and remove pizzelle Stack on wax paper in between till cooled. Repeat until all batter is used.

Pizzelles are another food thing we have in common from our childhood. I remember my grandmother making these with an iron that only made one cookie at a time over a gas flame. Now we have electric makers that are easier and make 2 at once but somehow, even though we use the same recipe that our grandmothers used, our electric pizzelle makers lack that special touch of our grandmothers and aunts. Still, it's important that we still make these cookies, they are a very important cookie in the Italian culture and we have to make sure our kids know how to make these......and they ROCK with a cup of coffee or tea.

Omg, they are beautiful, and MUCH prettier than the ones I buy at the Italian market. If you sold these , you would become a pizelle millionaire! Your grandma is so cute.

Hey C...I just wanted to report back, ater 40 years of making my family's recipe for pizzelles, today I tried yours (our's doesn't use shortening or baking powder)...please don't tell my aunts, but I like yours better! Yours are more crisp and light. Ours are more dense and hard....how am I going to explain 200 crisp & light pizzelles to my family?? They WILL notice the difference. My younger relatives will love them, the older ones will be ....suspicious...LOL! ;-)
