Grandma's Italian Style Green Bean Recipe

Grandma made everything simple back when I was growing up the foods were prepared with whatever we had in the house and she used to pick green beans in the fields, this is her recipe for the 1950s.

Olive oil, garlic, and herbs were staples to use so if you're looking for a simple side dish this would be the easiest green bean recipe you'll ever make.

Easy steamed fresh from the farmers market, homegrown, the beans are always delicious.

These do not have vinegar, just olive oil, and garlic, that's how she made them and we love these old Italian vintage recipes.









Easy Italian Green Beans

  1. clean, and remove both ends and strings
  2. boil them first in salted water
  3. drain them
  4. saute just to coat in a garlic oil
  5. serve hot or cold

Tip for Making Green Beans Perfectly

  1. Wash the string beans under cold water. Remove both ends of the beans by cutting them with a knife or you can snap them off. Remove any strings.
  2. Fill a medium saucepan almost full of water around 2/3, add around 3 teaspoons of salt, and bring to a boil over high heat.
  3. When the water boils add the beans.
  4. Simmer until just tender  and how you like them cooked, about 4 to 6 minutes
  5. After these are boiled I always saute garlic with olive oil and just coat the beans for flavor




String Beans and Suggestions

  • String beans can be steamed, fried, roasted or boiled and can be delicious all by themselves with nothing else on them
  • Boil them and to them into an Italian dressing
  • Saute in olive or boil and drain them then just add melted butter garlic powder salt and pepper
  • String beans are perfect to add to stews
  • Use string beans sauteed in bacon grease then top with crispy bacon

This is just a green bean cold or hot served salad-style side dish Grandma use to make. It's a little spicy and made with steamed beans.

Ingredients

  • 2 lbs cleaned green fresh-picked beans (or store-bought)
  • extra virgin olive oil drizzled over the top around 1/4 cup
  • 3 finely minced garlic cloves
  • red pepper flakes
  • salt and black pepper
  • fresh or dried oregano, basil, and parsley

Instructions

  1. Trim the beans.
  2. Rinse and snip the ends of both sides of the beans.
  3. Boil them in salt water to your desired doneness, we like them a little on the soft side
  4. They are wonderful roasted in the oven as well at 350 degrees until wilted with a drizzle of olive oil. I usually put them on parchment paper.
  5. Drain the cooked beans.
  6. Place in a bowl.
  7. Sprinkle with fresh or dried herbs, around 1/2 teaspoon of each if dried. J
  8. Just a little red pepper to taste along with salt and pepper.
  9. Drizzle olive oil over the top around 1/4 cup.
  10. Mix and serve cold or hot.
