Savory Zucchini Appetizer Recipe


This is a recipe I have been making for at least 25 years. A family favorite. I always grew my own garden and when these are in abundance, every picnic, party or gathering these were asked for. I couldn't make enough for everyone. They really are delicious, you won't be sorry you tried them and quick, easy, everyone will ask you for this recipe with one taste! I usually don't review my own recipes but I had to brag about this easy appetizer.....oh and if your really a cheese lover? Pile more mozzarella on top before cooking or after to make this like a pizza style appetizer!

1 1/2 cups of Bisquick
5 eggs
1/2 cup grating cheese
1 teas garlic powder
1/2 teas dried oregano
1/2 teas dried parsley
1/2 teas dried basil
1/2 cup oil
4 cups grated zucchini squeezed
1 cup of mozzarella
Mix all together and pour into a 13x9 pan bake until browned @350 around 35 to 45 minutes....cool cut into squares and serve. (My kids dip it in tomato sauce, but it doesn't need a thing!)
Cut into squares and serve warm or cold it's delicious!

I'd like to try out this recipe as it sounds really good. what can you use to substitute Bisquick? Is flour ok? I live in Brazil, and we can't get that here!

I've heard of something similar to this, and have yet to make it.....it sounds so good with the zucchini and mozzarella! Yum!

Sounds excellent, Claudia. Maybe this will be the answer to getting my kids to eat this vegetable...but I'm willing to eat it all myself if necessary :)

This looks similar to a zucchini dish my mom used to make in the summers when we had tons and tons of zucchini--loved it! I will try this when our plants kick in.

how long do you bake it and at what temp?

350 till browned... I have to say around 35 to 40 minutes, it browns evenly every oven is different so you have to watch it.. I have never overcooked it since the moisture level is high...its just like a cake.. no fail really.
